- ½ cup freshly chopped parsley
- 16 ozs purple Asparagus (blanched)
- 6 large, round wraps
- Sour cream (optional)

1 Cutting board, 1 Small knife, 1 Large knife, 1 Bowl, 1 Wooden spoon, 1 große Non-stick pan, 1 Slotted spatula, 1 Teaspoon, 1 Tablespoon, 1 Paper towel
Preparation steps
1.
In a large bowl, whisk eggs and cream together; season with salt and pepper.

Melt butter in a large skillet. Add the egg mixture and cook for about 5 minutes, stirring gently. Fold in parsley. Remove from heat.
3.
Divide the eggs in a thin layer on each of the wraps. Lay asparagus spears on top of eggs. Roll the wraps, cut in half and serve immediately. Top with a dollop of sour cream, if desired.
