- 400 grams Hokkaido pumpkin
- 400 grams potatoes (waxy)
- 4 scallions
- 2 carrots
- 1 Tbsp thyme
- salt
- freshly ground peppers

Preparation steps
1.
Peel pimpkin, halve and remove seeds, dice pumpkin pulp.
2.
Peel and dice potatoes.
3.
Rinse and dry scallions, cut into thin rings.
4.
Peel carrots and cut into thin slices.
5.
Bring broth to a boil and add vegetables. Cover and simmer for about 15 minutes. Add thyme and season with salt and pepper. Pour into bowls and serve.
