- 400 grams Pumpkin (or 1 yellow squash)
- 100 grams Parsnips
- 1 small Russet apple
- 1 onion
- 2 Tbsps vegetable oil
- ½ l Vegetable broth (jarred)
- ½ tsp Curry
- ½ tsp allspice
- ½ tsp ginger
- 2 Tbsps Sour cream
- 200 grams Cod
- 1 Tbsp vegetable oil
- 4 small dried chili peppers
- 1 sprig cilantro
- salt (pepper)

Preparation steps

Halve the pumpkin, remove the seeds and scrape out pumpkin flesh, leaving a 1 cm (approximately 1/2-inch) thick wall. Cut the pumpkin flesh into small pieces. Peel the parsnip and onion, finely chop. Peel, halve, core and finely chop the apple.
Heat 1 tablespoon oil in a saucepan and saute the pumpkin, parsnip, onion and apple 5 minutes. Add the broth and simmer 10 minutes. Add the spices and sour cream and puree in the pot with an immersion blender.

Heat the broiler. Brush the wall of the hollowed-out pumpkin halves with oil and broil briefly. Rinse the fish, pat dry, season with salt and saute quickly in remaining oil. Pour the soup into the pumpkin shells, place the fish in the center, garnish each with two chilies and cilantro.
