- ½ cup superfine caster sugar
- 4 cups Cider vinegar
- 4 bay leaves
- 1 Tbsp black peppercorns
- 6 cups button Mushrooms (halved)
- 6 cups Chestnut mushroom
- 1 ½ cups shiitake mushrooms (sliced)

Preparation steps
1.
Preheat the oven to 170°C (150°C fan) / 325°F / gas 3.
2.
Place a large 2 lb pickling jar in the oven with the lid to sterilise for 10 minutes.
3.
Dissolve the pickling salt and sugar in the vinegar, then simmer for 5 minutes in a large stainless steel saucepan with the bay leaves and black peppercorns.
4.
Remove the pan from the heat and add all the mushrooms, stirring well.
5.
Remove the pickling jar and lid from the oven. Ladle the mushrooms and liquid into the large pickling jar.
6.
Seal well with the lid, then cover with cheese cloth or dense muslin and tie with string to secure.
7.
Let it cool to room temperature before serving.
