- 25 ozs Okra
- 1 Tbsp Sea salt
- 4 cloves garlic cloves (halved)
- 6 red chili peppers (split lengthwise)
- 2 tsps Coriander
- 3 cups white wine vinegar
- 1 Tbsp sugar

Preparation steps
1.
Put the okra into a colander over a large bowl and sprinkle with the salt. Cover and leave overnight to drain.
2.
Rinse the okra, then press them to squeeze out the excess moisture and dry them with a cloth. Spread the okra on a cloth to dry thoroughly. Pack the okra and garlic into hot sterilised jars.
3.
Put the chillies, coriander, vinegar and sugar into a pan and heat slowly, stirring until the sugar has dissolved. Bring to a boil and pour over the okra, making sure it is completely covered. Cover, seal and label.
