Ingredients

cup butter
0.333 cup caster sugar
1 tsp vanilla extract
2 ¾ cups all-purpose flour
For the filling
¼ tsp vanilla extract
3 ½ ozs white chocolate
1 Tbsp Espresso (cooled)
For the decoration
3 ½ ozs white chocolate

Preparation steps

1.
For the biscuits: heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.

Cream the butter, sugar and vanilla in a mixing bowl until creamy. Add the flour and mix to a soft dough. Wrap in clingfilm and chill for 30 minutes.

Roll out the dough 5 mm|1/4" thick on a surface dusted with a little flour. Cut out 40 stars. Place on the baking trays and bake for about 15 minutes until golden brown. Remove and cool on a wire rack.

For the filling: melt the white chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Stir in the espresso. Allow to stand and thicken.
5.
Spread the espresso filling over 20 stars. Place the remaining stars on top.
6.
For the decoration: melt the white chocolate and drizzle over the top of the stars. Leave to set.
