3 cups macaroni
cup olive oil
¾ cup raw King prawn (peeled with tails intact)
cup Chorizo (sliced into 1 cm thick discs)
½ red pepper (de-seeded and finely diced)
1 pinch Saffron

Preparation steps

Bring a large saucepan of salted water to the boil and cook the macaroni for 8-10 minutes until 'al dente. '

Meanwhile, heat the olive oil in a frying pan set over a moderate heat. Saute the king prawns with some seasoning for 3-4 minutes, then add the chorizo and cook for a further minute to warm through.

Cover and keep warm to one side.

Drain the pasta when ready and spoon into serving bowls. Top with a mixture of the king prawns and chorizo, then sprinkle some diced red pepper on top. Garnish with some saffron strands before serving.
