4 Poussin (about 450 grams)

2 Tbsps sunflower oil
8 sprigs thyme
2 sprigs rosemary
400 milliliters dry white wine
4 Tbsps honey
4 Tbsps butter
500 grams Grape (seedless)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the poussin, pat dry, and season inside with salt and pepper. Fill cavity with herbs. Secure with toothpicks. In a roasting pan, fry poussin in hot oil until golden brown on all sides. Deglaze with some wine. Roast in oven about 40 minutes, basting poussin with additional wine intermittently. Brush poussin with butter and honey several times during the last 15 minutes of baking time.

Remove skin from grapes and add to the roasting pan during the last 10 minutes of baking time.

Remove toothpicks from poussin and serve with grapes and pan juices.
