- 2 Poussin (each about 400 grams)
- 4 Tbsps honey
- 2 tsps whole red peppers (corns)
- 100 grams instant Couscous
- 100 grams dark raisins
- 50 grams chopped almonds
- 5 Tbsps Rose water
- 20 grams butter
- salt
- freshly ground black peppers
- Rose petal (pesticide-free)

Preparation steps
1.
To make the honey marinade, mix 3 tablespoons of the honey with the red peppercorns, season with salt and pepper, and let the marinade rest for 30 minutes.

Soak the raisins in rosewater.

Brush the poussin with honey marinade and roast in a greased pan in preheated oven (200°C/approximately 400°F) for about 20 minutes.
4.
Put the couscous in a bowl, pour 100 ml (approximately 3 1/2 ounces) water, cover, and let stand for 10 minutes. Fluff with a fork.
5.
Fold the almonds, butter, raisins, and remaining 1 tablespoon honey into the couscous.
6.
To serve, arrange the poussin on the couscous and garnish with rose petals.
