Potatoes and Sauerkraut with Pork

If you are a regular sauerkraut, you can positively influence your intestinal flora. Plenty of fibre and lactic acid are a real boon to our digestion. Potatoes also contain good things for the intestines and also keep us full.
You can also prepare the potato and sauerkraut pan with Kassler in a vegetarian version. Either leave out the Kassler without replacement or replace it with smoked tofu.

- 500 grams Smoked pork chop (piece, boneless)
- 1 onion
- 600 grams waxy potatoes
- 1 sm jar Sauerkraut (about 285 g drained)
- 20 grams butter
- 50 milliliters dry white wine
- 2 Tbsps scallions
- salt
- freshly ground peppers
- 4 Tbsps Crème fraiche
Preparation steps
Cut the pork into bite-sized cubes. Rinse, peel, and slice the potatoes. Cook for 15 minutes in boiling salted water, then drain well.
Peel and thinly slice the onion. Heat the butter in a pan, and cook the potatoes over low heat until golden brown, about 10 minutes. Add the onion, diced pork, and sauerkraut. Sauté briefly, then add the white wine. Boil for 5 minutes over high heat.
Season the dish with salt and pepper to taste.Top with the chopped chives. Garnish with the creme fraiche, and serve.
