Preparation steps

1.

Rinse potatoes and cut into wedges. Cook potatoes in boiling water, about 10 minutes. Drain, rinse and let cool.

In a large pan, heat oil until it registers 180°C (approximately 350°F). In batches, fry potato wedges, 1-2 minutes per batch. Drain and season with sea salt. Serve with sour cream.
