Potato Salad with Yogurt Dressing
Rinse the potatoes and boil in salted water for 25 - 30 minutes.
Drain, let the water evaporate, then peel and cut into slices.
Rinse and trim the scallions and cut into thin rings.
For the dressing, mix the mayonnaise with the vinegar and yogurt and then stir into the potatoes. Season with salt and pepper and mix in the scallions.
Serve garnished with chives.
Suggestion: Goes well with fish or grilled sausages.
