- 1 kilogram waxy potatoes
- 1 large onion
- ½ bunch Radish
- 2 Tbsps scallions
- 4 Tbsps White vinegar
- 6 Tbsps Beef broth
- 1 tsp Mustard
- salt
- peppers (freshly ground)
- 6 Tbsps sunflower oil
- 4 pairs Hot dog
- scallions (for garnish)

Preparation steps

Rinse the potatoes and cook in a pot of boiling salted water until fork tender, about 30 minutes. Drain, let cool slightly and cut into slices. Peel and finely chop the onion. Rinse the radishes and slice into 3 mm (approximately 1/4 inch) strips.

In a bowl, whisk the vinegar with the broth and mustard. Season with salt and pepper to taste. Whisk in the oil until emulsified. Combine the potatoes, onions, radishes and chopped chives in a bowl and gently toss with the dressing. Allow to soak for 15 minutes. Garnish with chives.
3.
To heat the sausages, add to hot simmering water, but do not boil. Serve with the potato salad.
