Ingredients

2 onions
1 garlic clove
1 Tbsp butter
300 grams cooked potatoes
200 grams Emmentaler cheese
100 grams Blue cheese
125 grams Mozzarella
2 Tbsps freshly chopped parsley
ground Caraway
freshly ground peppers
1 egg yolk
2 Tbsps Whipped cream
350 grams Puff pastry dough

Preparation steps

Peel onions and garlic, chop finely. Heat butter in a pan and saute onions and garlic until translucent. Transfer to a bowl and let cool. Peel and dice potatoes. Cut cheese into cubes and combine with parsley, potatoes and onion mixture. Season with cumin powder and pepper.

Whisk egg yolk with cream.

Roll out puff pastry and cut into 4 circles about 22 cm in diameter (approximately 9 inches). Place cheese mixture on one side of circles, leaving about 2 cm edge (approximately 3/4 inch) and fold pastry in half. Brush the edges with egg mixture and press the edges together firmly decoratively. Arrange pies on a lined with parchment paper baking sheet and brush with remaining egg mixture. Bake in preheated oven at 180°C (approximately 350°F) for about 35 minutes or until golden brown.

Remove from the oven, allow to cool briefly and serve.
