For the applesauce
6 ripe Apple (such as Boskop)
2 Tbsps sugar
1 Tbsp lemon juice
½ Cinnamon stick
2 cloves
6 Tbsps dry white wine (or apple juice)
For the potato pancakes
800 grams potatoes
salt
Nutmeg (freshly grated)
2 eggs
4 Tbsps Pastry flour
clarified butter (for frying)

Preparation steps

For the applesauce, rinse apples, cut into quarters, remove cores and cut into small cubes. Place in a pot with sugar, lemon juice and spices and bring to a boil. Pour in wine and simmer over medium heat for 5-7 minutes. Remove from heat, remove cinnamon stick and cloves and cool.

For the potato pancakes, peel potatoes, rinse and grate. Place pieces in a kitchen towel and squeeze. Mix with nutmeg, salt, eggs and flour. Heat butter in a pan and add a tablespoon of potato mixture. Press flat and cook on both sides until golden brown. Remove, drain on paper towels and serve with applesauce.
