Preparation steps

1.

The day before, peel the potatoes and cook in boiling salted water for about 20 minutes, drain and let cool.

The next day, press the potatoes through a ricer and mix with flour, egg, and egg yolk, season with salt and pepper and let the dough rest.

Peel and halve the onions and cut into strips. Sauté the onion in a saucepan with clarified butter, add sauerkraut, bay leaves, and juniper berries. Pour in the broth and simmer for 30 minutes, covered on low heat.

Form finger-like dumplings about 8 cm (approximately 3 inches) long. Cook for 5 minutes in boiling salted water. Remove with a slotted spoon and drain. Season the cabbage with salt and pepper and remove the bay leaves.

Dice the bacon and cook in a large pan, add the noodles and fry briefly. To serve, arrange the potato dumplings with bacon on plates over the sauerkraut.
