- 800 grams new potatoes
- Sea salt
- 250 grams Cherry tomatoes
- 100 grams black Olives (pitted)
- 1 handful Arugula
- 2 garlic cloves
- 3 Tbsps olive oil
- 1 Tbsp lemon juice
- freshly ground peppers
- 50 grams grated Cheese (such as pecorino)

Preparation steps

Scrub the potatoes thoroughly, halve and cook in a pot of boiling salted water until knife-tender, about 20 minutes.

Preheat the oven to 200°C (approximately 400°F).

Rinse and halve the tomatoes. Drain the olives. Rinse the arugula and shake dry. Peel the garlic and chop. Toss the drained potatoes with the tomatoes, olive, arugula, garlic, olive oil and lemon juice. Transfer to a baking dish, season with salt and pepper and bake for about 15 minutes.

Serve sprinkled with grated cheese.
