Ingredients

For the gnocchi
500 grams starchy potatoes
150 grams Whole wheat flour
50 grams Wheat semolina
1 egg
1 egg yolk
salt
freshly ground pepper
For the sauce
200 grams Gorgonzola
150 grams Whipped cream
200 grams Vegetable broth
salt
freshly ground pepper
Nutmeg
parsley (for garnishing)

Preparation steps

For the gnocchi; scrub potatoes and cook in salted water for about 25 minutes. Drain and let evaporate, peel and press through the ricer. Combine with flour, semolina, egg and egg yolk, season with salt and pepper.

For the sauce: crumble gorgonzola and combine with cream and vegetable broth, bring to a boil and simmer on medium heat until creamy, season with salt, pepper and nutmeg. Keep warm on low heat.

Separate small dumplings from potato mixture, shape into gnocchi and press with a fork to make a pattern. Cook in boiling salted water until they rise to the surface. Remove from water with a slotted spoon and drain well. Arrange on plates and drizzle wtih sauce. Garnish with parsley and serve.
