1 kilogram starchy potatoes
1 egg
200 grams Pastry flour
salt
Nutmeg (freshly grated)
Pastry flour (for work sruface)
180 grams Bacon
120 grams sun-dried Tomatoes (in oil)
1 onion
1 garlic clove
300 grams baby Spinach
1 thyme
2 Tbsps olive oil
freshly ground peppers
1 tsp Fenugreek seed

Preparation steps

Scrub potatoes and cook in salted water for about 30 minutes or until tender. Drain and peel, press through the ricer. Add egg and flour to potatoes. Season with salt and nutmeg. Knead to a smooth dough. Roll out until about finger-thick rolls and cut into wide pieces. Press with fork and cover with kitchen towel, let rest for about 10 minutes.

Dice bacon and drain tomatoes, chop if desired. Peel onion and garlic and dice finely. Rinse and spin dry spinach. Rinse thyme, shake dry and pluck off leaves.

Cook gnocchi in boiling salted water for about 5 minutes or until they float up to the surface. Remove with a slotted spoon and drain well.

Heat oil in a large frying pan and saute onion and garlic until translucent. Add bacon, thyme and tomatoes and saute briefly. Add gnocchi and saute for about 2 minutes. Add spinach and season with salt, pepper and fenugreek. Arrange on plate and serve.
