- 1 kilogram cooked potatoes
- 2 eggs
- 1 egg yolk
- 2 Russet apples
- 2 Tbsps lemon juice
- 200 grams Watercress
- 200 grams Mayonnaise
- 300 Smoked salmon (in slices)
- salt
- freshly ground peppers
- Nutmeg
- vegetable oil (for cooking)
- Watercress (for garnish)

Preparation steps
1.
Press potatoes through a ricer, mix with the eggs and egg yolks and season with salt, pepper and nutmeg. Shape into cakes about 3 cm (approximately 1 inch) large and cook golden brown in hot oil on both sides, drain and let cool.

Rinse apples, quarter, cut out core, chop and mix immediately with lemon juice.

Trim watercress, rinse and mash with the mayonnaise. Season with salt and pepper.
4.
Spread cress mayonnaise on the potato cakes, roll salmon slices slightly, put on cakes and top with the apples. Serve garnished with watercress leaves.
