Potato and Pumpkin Pancakes with Fruit Skewers
Peel the potatoes and grate finely along with the pumpkin. Mix well with eggs, starch, salt, and sugar.
Cook spoonfuls of the batter in a pan in hot oil, for about 1-2 minutes on each side, until golden brown. Drain on paper towels and sprinkle with sugar.
Arrange the grapes and mandarin orange segments on wooden skewers and serve with the pancakes.
