- 800 grams potatoes (waxy)
- 5 Tbsps olive oil
- 1 packet Fresh herbs
- salt
- freshly ground pepper
- 1 onion
- 500 grams button Mushroom
- 6 eggs
- Nutmeg
- 1 stalk parsley
Preparation steps

Rinse peel and thinly slice potatoes. Season potatoes with salt and pepper. Heat oil in a pan and cook potatoes for about 10 minutes. Peel and mince onions. Add to pan and cook for 5 minutes.

Wipe mushrooms with a paper towel, julienne and add to pan, cook 5-10 minutes more.
Beat eggs and season with salt and pepper, add herbs.
Remove potatoes from pan, mix with spinach, bacon and egg mixture. Heat remaining oil in the pan, add potato mixture, cover and cook over low heat for 10-15 minutes.
Remove from heat and cut into pieces. Serve on skewers, garnished with parsley.
