- 15 grams dried Porcini mushroom
- 50 milliliters sherry (medium-dry)
- 50 milliliters Vegetable broth
- 12 eggs
- 100 milliliters milk
- salt
- freshly ground peppers
- 1 Tbsp butter
- Leeks (for garnish)

Preparation steps

Soak dried mushrooms in sherry and vegetable stock for about 30 minutes. Meanwhile, preheat the oven to 180°C (approximately 350°F) convection. Whisk the eggs with the milk. Season with salt and pepper.

Drain mushrooms in a colander. Melt the butter in a oven-proof, non-stick skillet. Add egg mixture to the skillet and pour in the mushrooms. Bake in a preheated oven for 25-30 minutes. Garnish with chives before serving.
