Potato and Kielbasa Salad

- 800 grams small potatoes
- 4 kielbasa Sausage
- 1 tablespoon clarified butter
- 1 teaspoon vegetable oil
- 200 grams baby Spinach
Rinse the potatoes, cut in half and place on a greased baking sheet. Season with salt and pepper and bake in an oven preheated to 200°C (approximately 400°F) for 30 minutes.
For the dressing: Rinse the chives, pat dry and slice thinly. Set 2 tablespoons aside and mix the rest with the vegetable broth, herb vinegar and vegetable oil. Season with salt and pepper to taste.
Rinse the baby spinach, spin dry and divide between 4 salad bowls. Cut the kielbasa sausage diagonally into 1 cm (approximately 3/8 inch) thick slices and sauté in the clarified butter until browned.
Remove the potatoes from the oven and sauté briefly with the kielbasa. Transfer the mixture to the salad bowls, drizzle with dressing and sprinkle with the reserved chives.
