1 chicken (about 1.5 kg)
1 onion (cut into wedges)
2 cups strong hard cider (dry)
2 tsps sugar
4 cups hot chicken stock
2 carrots (sliced)
1 lemon (cut into wedges)
4 Apple
salt

2 sprigs rosemary

Normal Cooking: You will need half the amount of chicken stock listed in the above recipe. Place the chicken in a large baking dish or tin. Follow the recipe from step 2 to the end of step 6. Cover and cook for 1-11/2 hours 180C| 350F/gas 4, until the chicken is thoroughly cooked.

Preparation steps

Preheat the slow cooker if necessary – see manufacturer’s instructions.

Heat the oil in a frying pan (skillet) and put in the chicken breast side down. Cook for about 10 minutes, turning the chicken so that it browns all over.

Put the chicken, breast side down in the slow cooker pot.
4.
Add the onion wedges to the pan and cook until golden. Add the cider and sugar and bring to a boil. pour over the chicken.
5.
Cut the apples into wedges.
6.
Add the hot stock, carrots, lemon, apples, salt and pepper to the slow cooker pot. The chicken and vegetables should be covered by the liquid. Add the rosemary.
7.
Cover and cook on high for 5-6 hours until the chicken is cooked and the juices run clear when pierced with a skewer.
