Preparation steps

1.

Soak the salt cod in cold water for at least 12 hours, changing the water several times.

2.

Transfer to a saucepan and cook for about 15 minutes in boiling water. Remove, let cool slightly, remove the skin and bones and break into small pieces.

3.

Peel the potatoes, rinse and cook for about 25 minutes in boiling water, drain, let the steam evaporate and press through a potato ricer. Peel the onion and finely chop.

4.

Mix the salt cod with the riced potatoes, onion and chopped parsley. Stir in the Port and season with salt, pepper and freshly grated nutmeg.

5.

Mix in the eggs, 1 at a time, smooth.

6.

Shape into balls using 2 tablespoons of cod mixture for each and fry until golden brown in hot oil. Drain on paper towels. Serve lukewarm.
