- 600 grams Stockfish (salted)
- 300 milliliters milk
- 150 milliliters olive oil
- 2 garlic cloves
- ½ organic lemon (Juice and zest)

Preparation steps

Place cod in a bowl of cold water and let soak at least 12 hours, changing the water several times. Drain fish and transfer to a saucepan. Add milk, cover and simmer about 8 minutes. Remove fish from milk, and set milk aside. Remove skin and bones and transfer to a bowl. Flake fish with a fork.

Peel garlic cloves and press through a garlic press into the bowl with the fish. Add 1/4 of the milk, half the olive oil, and the lemon zest. Mash well. Gradually, stir in remaining oil and enough milk so that puree has the consistency of mashed potatoes. Season with lemon juice and pepper. Place bowl in another bowl filled with warm water. Stir until warmed through.

Serve with toast and chopped sun-dried tomatoes (packed in oil).
