- 16 ozs boneless salt cod
- boiling water
- ½ small onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 1 Tbsp chopped parsley
- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- salt (to taste)
- ¼ tsp freshly ground Black pepper
- 1 Tbsp olive oil
- 4 eggs
- olive oil (for frying)

Preparation steps
1.
Cook the fish in a pan, just covered with boiling water, for 5-8 minutes. Drain, reserving 225ml|1 cup of the liquid.

Shred the cod into flakes.
3.
Mix together the onion, garlic parsley, cod, flour, bicarbonate of soda, salt, pepper and olive oil and mix well.
4.
Beat the eggs with some of the reserved liquid and gradually add to the cod mixture to form a thick batter. Add more liquid if needed. Stir well to incorporate.
5.
Heat the oil in a frying pan and fry spoonfuls of the mixture, a few at a time, patting them down to cook flat. Cook until golden brown on each side. Drain on absorbent kitchen paper.
