2 stalks Sage
4 sprigs Lemon thyme
1 Tbsp butter (15 grams)
2 tsps powdered sugar (10 grams)
4 Tbsps Calvados (or apple juice)
1 Tbsp Canola oil

Preparation steps

1.

Rinse pork under cold water, pat dry, cut into thin slices and season with salt and pepper.

2.

Rinse apples, cut into quarters, remove core and cut into small cubes. Rinse sage and thyme, shake dry and chop sage leaves.

3.

Heat butter in a frying pan, sauté apples over medium heat for 2-3 minutes, dust with icing sugar and allow to slightly caramelize. Deglaze the pan with calvados, add herbs, mix and simmer for 2-3 minutes over medium heat.

4.

Meanwhile, heat oil in another pan and fry pork over high heat for about 2-3 minutes on each side until golden brown.

5.

Add pork to apples, mix well and serve immediately.
