Preparation steps

Preheat the oven to 210°C (approximately 400°F).

Soak raisins in 50 ml (approximately 3 1/2 tablespoons) cider.

Rinse the pork chops, pat dry, brush with the mustard, season with salt and pepper and sear in a hot pan with oil. Remove, drain on paper towels and place on a parchment paper-lined baking sheet. Peel the shallots, chop finely and fry in pan drippings. Deglaze with the remaining cider and cook until reduced to 3 tablespoons. Pour in the cream, bring to a boil and season with salt and pepper.

Rinse the oregano, shake dry and pluck the leaves from the stems.

Peel the onion and dice finely. Peel the apple, cut into quarters, remove the cores and cut into narrow strips. Cook the onion in a pan with melted butter until translucent, ​​add the apple slices, cook briefly and stir in raisins with the cider. Simmer until the liquid has completely evaporated.

Spread the mixture over the chops, sprinkle with the cheese and bake until golden brown in a preheated oven.
