800 grams Pork tenderloin (ready to cook, trimmed)

4 Tbsps olive oil
2 Fennel bulb
2 red onions
1 garlic clove
2 sprigs rosemary

1 handful Arugula

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the pork and pat dry. Season with salt and pepper, and brown on all sides in a pan with 2 tablespoons of oil. Remove from the pan and transfer to a baking sheet. Rinse the fennel, remove the core, and cut into wedges. Peel the onions and cut into wedges. Spread the onion and fennel wedges on the pan. Halve the garlic horizontally and place on top of the vegetables. Season with salt and pepper, and drizzle with the remaining oil. Remove the leaves from the rosemary, and sprinkle over the vegetables and pork. Cook for 30 minutes in the oven.

Stir the pork and vegetables occasionally. Remove from the oven, slice the pork, and serve with the vegetables. Garnish with the arugula and the rosemary.
