4 Pork (from the hip, each 200 grams)
1 Tbsp clarified butter
1 Red onion (finely chopped)
2 Tbsps Brandy
300 milliliters Orange juice
1 Tbsp grainy Mustard
1 Tbsp liquid honey
1 Tbsp Worcestershire sauce
1 Orange (thinly sliced)
salt
freshly ground peppers
2 carrots
150 grams Snow peas
2 Tbsps butter

Preparation steps

1.

Season the meat with salt and pepper and sear in in a pan in clarified butter over high heat for about 3 minutes on each side. Remove from pan, wrap in aluminum foil and keep warm.

Sauté onion in the butter that remains in the pan. Pour in brandy, bring to a boil and add orange juice, mustard, Worcestershire sauce and honey. Return to a boil, add orange slices and cook until syrupy over high heat. Season with salt and pepper.

Peel carrots and cut into slices. Rinse snow peas and cut off ends. Blanch carrots in boiling salted water for 4 minutes. Then add snow peas and cook another 4 minutes. Drain, rinse in cold water and drain.

4.

Heat vegetables in a pan in 2 tablespoons melted butter, stirring to coat. Season with salt and pepper.

5.

Add the meat  to the sauce with accumulated juices, heat through and serve with the vegetables.
