4 Pork saddle steaks (each 150 grams)
salt

800 grams ripe Tomatoes
1 small onion
1 garlic clove
2 small carrots
1 tsp sugar
cold-pressed olive oil
balsamic vinegar
freshly grated Nutmeg
mixed Lettuce (as desired, rinsed and spun dry)

Preparation steps

Rinse the tomatoes, blanch, peel, halve, remove seeds and cut into small pieces. Peel carrot and cut into very small cubes. Peel garlic and cut lengthwise. Heat 2 tablespoons oil and cook the onion until soft. Add the carrots and cook. Add tomato pieces and garlic and cook covered over medium heat for about 5 minutes, until the tomatoes are soft. Periodically stir to keep the sauce from sticking to the pot bottom. If needed, add 2 tablespoons of water. Season with salt, pepper, sugar and nutmeg.

Rinse the pork steaks and pat dry. Cook in a heavy frying pan 2-4 minutes on each side. Lift from pan, season with salt and pepper and drizzle each with 1 tablespoon olive oil.

Mix 2 tablespoons olive oil and 1 tablespoon vinegar to make a vinaigrette, season with salt and pepper and mix with the salad greens.

Serve steaks immediately with tomato sauce and the salad.
