2 kilograms lean Pork ribs
125 milliliters olive oil
1 thyme
1 Sage
1 Red chili pepper (seeded)
salt
freshly ground peppers
3 garlic cloves
1 Tbsp Tomato paste
1 kilogram new Potato
700 grams fresh Spinach
1 Tbsp butter
1 Tbsp finely chopped parsley

Preparation steps

Cut the ribs into individual 3- to 4-rib sections. Rinse with water and pat dry. Seed and thinly slice the chile peppers. Peel and chop the garlic. Chop the herbs and mix with oil, chile peppers, tomato paste, salt and pepper. Puree with an immersion blender for the marinade. Reserve 1/4 cup of the marinade.

Pour the remaining marinade over the ribs in a large bowl, turning to coat. Refrigerate for about 2 hours. Remove the ribs from the marinade. Broil or grill 5 to 8 minutes on each side. Drizzle ribs with the reserved marinade.

Rinse the spinach. Cook in a large pot until wilted. Drain well. Melt the butter in a pan and cook the spinach until heated through, Season with pepper and a little salt.

Rinse the potatoes and cook plenty of boiling salted water for about 20 minutes or until tender. Drain, cut the potatoes in half and sprinkle with the parsley. Serve the ribs with spinach and potatoes.
