200 grams Cherry tomatoes
2 Zucchini
2 yellow Bell pepper
8 sprigs Lemon thyme
1 garlic clove
6 Tbsps olive oil
1 Tbsp Lime juice

Preparation steps

Heat the grill.

Cut the lemongrass into quarters and separate the layers. They should resemble skewers.

Rinse the meat. Pat dry and cut into 2 cm (approximately 1 inch) rolls. Rinse the vegetables. Cut into 1 cm (approximately 1/3 inch) slices. Cut the larger slices in half. Cut the peppers in half, remove the seeds and the white walls. Cut into bite sized pieces. Rinse the thyme, shake dry, and pluck the leaves. Peel the garlic, press into the oil through a garlic press. Add the thyme and lime juice and season with salt and pepper. Marinate the meat with the vegetables for 1 hour. Alternate the vegetables and the meat on the lemongrass stalks. Cook on the hot grill for 10-12 minutes, turning as needed.

To serve, arrange the lettuce in a bowl and place the skewers on the lettuce. Serve while the meat and vegetables are still warm.
