1 Pork loin
15 garlic cloves
1 lemon (about 2 tsp zest)
1 bunch Sage
salt
freshly ground peppers
olive oil
200 milliliters dry white wine

Preparation steps

For the pork loin: Peel and mince 2 cloves of garlic. Rub the garlic and lemon zest over the pork loin. Season with salt and pepper to taste. Allow to marinade for 1 hour.

Peel and mince the remaining garlic cloves.

Heat 2-3 tablespoons oil in a skillet. Add the pork and sear until golden on all sides. Place a handful of sage under the pork and allow to cook for 30 minutes. Remove the pork from the skillet and rest for 5 minutes. 

For the garlic-sage sauce: Stir the wine into the skillet. Add the remaining garlic and sage. Bring to a boil and simmer until reduced. Season with salt and pepper to taste. 

For serving: Slice the pork. Serve with the garlic-sage sauce. Serve with Tuscan bread if desired.
