600 grams lean Pork belly
½ tsp crushed Caraway
2 garlic cloves

2 Tbsps paprika (sweet)
1 kilogram waxy potatoes
2 onions
2 Tbsps clarified butter
2 Tbsps White vinegar
400 milliliters Beef broth
1 sm can peeled Tomatoes
50 grams Whipped cream
2 Tbsps scallions

Preparation steps

1.

Cut pork into 2.5 cm (approximately 1 inch) cubes. Peel and chop garlic.

2.

Season pork with salt, pepper, cumin, garlic and 1 tablespoon paprika.

Peel potatoes, trim and dice. Peel onions and chop roughly.

4.

Heat butter in a casserole dish, add pork and fry over high heat. Add onions and briefly fry. Stir in remaining paprika and immediately deglaze pan with vinegar and broth. Add potatoes and tomatoes and cook everything for about 25 minutes. Simmer and season to taste.

5.

To serve, arrange pork goulash on plates and sprinkle with chives. Top with a dollop of sour cream if desired.
