- 4 Pear (such as williams Christ)
- 2 Tbsps lemon juice
- 4 Pork cutlets (each about 150 g)
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 2 Tbsps Maple syrup
- 1 tsp sweet Mustard
- 50 milliliters dry white wine
- 70 milliliters Apple juice
- parsley (for garnish)
Preparation steps

Rinse the pears, halve lengthwise, and drizzle with lemon juice. Rinse the meat, pat dry, and season to taste with salt and pepper. Heat the oil in a pan, and sear on both sides. Remove from the oven and keep warm in a 80°C (approximately 175°F) oven.

Place the pears in the pan, sauté briefly, then add the syrup and lightly caramelize. Stir in the mustard, white wine, and the apple juice. Season to taste with salt and pepper, and simmer until thick over medium heat, about 10 minutes.

Return the meat to the pan, and stir until everything is combined. Garnish with parsley and serve.
