8 slices cooked Smoked pork chop (about 80 grams)
250 milliliters milk
2 Tbsps butter

Preparation steps

Peel, rinse and boil the potatoes in salted water for about 30 minutes until done.

Peel the apples, cut into quarters, remove the core, and dice the flesh.

For the apple compote, add the apples to a saucepan with lemon juice and honey, cover with lid and and bring to a boil. Cook covered over low heat until the apples get mushy. If necessary, add in some water.

Boil the beef broth with the cloves, juniper berries and bay leaf. Add in the smoked pork chops and let boil over low heat.

For the mashed potatoes, drain the potatoes, let cool, and press through the ricer. Puree the potatoes with hot milk and cold butter until smooth, and season with salt.

Remove the pork chops from the broth, place on warmed plates, pour over the apple compote and serve with mashed potatoes.
