- 2 Tbsps olive oil
- 1 large onion (finely chopped)
- 2 cloves garlic cloves (minced)
- 11 ozs Smoked Sausage (roughly chopped)
- 3 cups roasting potatoes (peeled and diced)
- 5 cups low-sodium vegetable stock
- 3 cups Kale (chopped)
- flat-leaf parsley (chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the oil in a large casserole dish set over a medium heat until hot. Add the onion, garlic, potato, and a little salt, sweating for 3 - 4 minutes until softened.

Add the sausage and potato, cooking for a further 3 - 4 minutes. Pour in the stock, stir well, and cook until simmering.
3.
Once simmering, reduce the heat slightly and cook for a further 20 minutes or until the potato is tender.
4.
Once tender, stir in the kale and continue to cook for a further 5 minutes until softened. Stir through the parsley and adjust the seasoning to taste.
5.
Ladle into bowls and serve immediately.
