2 waxy potatoes (peeled and cut into bite-sized chunks)
0.333 cup olive oil
2 cloves garlic cloves (minced)
1 tsp Garlic salt

Preparation steps

1.
Cook the potatoes in a large saucepan of boiling, salted water until tender; roughly 15-20 minutes.

Drain and allow to cool a little and dry out.

Heat the most of the vegetable oil in a large frying pan over a medium-high heat and saute the garlic for 1-2 minutes, stirring occasionally.
4.
Add the potatoes to the pan and saute for 6-8 minutes, until golden brown and crispy on the outside; add more vegetable oil if too dry. Season with the garlic salt and pepper.
5.
Spoon into serving bowls and garnish with the white poppy seeds.
