8 scallions
300 grams fresh Fava bean
500 milliliters Fish broth
1 tsp Chile oil
100 milliliters dry white wine
4 centiliters Pernod
4 Cod about 180 g (approximately 6 ounces) each
4 sprigs Dill
Sea salt

Preparation steps

1.

Rinse the scallions and cut half of them into diagonal slices. Rinse and drain the broad beans. 

2.

Bring the fish broth to a boil and stir in the chili oil, white wine and Pernod liqueur. Add the sliced green onions and beans to the liquid and simmer for about 5 minutes. 

3.

Rinse the cod and pat dry. Rinse the dill and remove the fronds from the stems. Season the broth with salt and pepper, reduce the heat to low and add the cod, dill and whole scallions to the pot. Poach for about 10 minutes, until the cod reaches about 70°C (approximately 160°F). Transfer everything to a large serving dish and serve immediately.
