Plum Yogurt with Walnuts
This dish is packed with protein from the yogurt and walnuts, as well as fiber from the plums.
You can easily turn this into a vegan recipe by replacing the standard low-fat yogurt with your favorite nut-milk variety.
Rinse, pit and chop the plums. Place plums in a pot with honey, cinnamon stick, lemon juice, lemon zest and 5 ounces of water and bring to a boil. Remove from heat and let cool.
Mix yogurt with a few tablespoons of the plum compote.
Remove cinnamon stick from the compote and distribute the compote among glasses. Top with yogurt and serve sprinkled with chopped walnuts.
