1 egg yolk

400 grams Mozzarella
80 grams black Olives (pitted)
6 sprigs thyme

Preparation steps

Defrost the pastry.

Preheat the convection oven to 220°C (approximately 425°F).

Rinse the tomatoes, remove the stems and cut into slices. Peel the garlic, chop finely and grind finely with a little salt with a knife back. Mix with 2-3 tablespoons of olive oil. Cut the mozzarella into slices. Roll out the dough and cut into 8-10 equal squares (10 x 10 cm) (approximately 4 x 4 inches). Place on a baking sheet lined with parchment paper. Brush the edge with beaten egg yolks Drizzle the center with the prepared garlic oil.

Distribute the tomato slices, olives, and cheese on the dough and season with thyme, salt, and pepper. Drizzle with the remaining olive oil and bake in the preheated oven for 25-30 minutes. Serve garnished with basil.
