200 grams Margarine
200 grams sugar
1 packet Vanilla sugar
1 packet grated Lemon peel
4 eggs
200 grams Pastry flour
25 grams cornstarch
2 teaspoons Baking powder
100 grams ground Pistachio
For the topping and decorating
100 grams Pistachio
250 grams powdered sugar
2 egg whites
lemon juice
20 Red Candied cherry
20 thin Chocolate (dark)

Preparation steps

For the batter: Whisk margarine until creamy. Gradually, add sugar, vanilla, lemon zest and egg. Combine flour with cornstarch, baking powder and pistachio and add to margarine mixture. Butter baking log pan and spread batter in it, smooth. Bake in preheated oven at 180°C (gas 2-3, fan 160°F) (approximately 350°F) for about 50 minutes.

Remove from the oven and cool slightly. Loosen from the pan and cool completely.

For the topping and decorating: Chop pistachios coarsely.

Whisk powdered sugar with egg whites and lemon juice into thick glaze. Spread cake with the glaze and decorate cake with pistachios, candied cherries and chocolate chips. Serve cake cut into slices.
