- 1 kilogram small gherkins (uniform in size)
- 2 Tbsps salt
- 1 tsp black peppercorns
- 1 tsp allspice
- 1 Tbsp Mustard seed
- 1 onion
- 350 milliliters Wine vinegar
- 50 grams sugar

Preparation steps

Rinse the cucumbers and scrub to remove any prickly spines from the skin. Place in a large bowl, sprinkle with salt and cover with water. Allow the cucumber to soak for 24 hours. The next day, drain the salt water and pat dry. Peel the onion and slice very thinly.

Layer the cucumbers in jars with the sliced onion, peppercorns, allspice berries and mustard seeds. Boil the vinegar with the sugar and 350 ml (approximately 2 cups) of water. Stir until the sugar has dissolved. Pour into the jars, seal and let cool. Transfer to the refrigerator once cooled and wait about 6 weeks before serving.
