- 4 small Leeks (sliced)
- 2 crisp, green Apple (sliced and chopped)
- 1 lemon (juice)
- 1 cup chopped Walnut (plus extra for sprinkling)
- 4 Pickled herring (cut into pieces)
- For the dressing
- 3 tsps mustard powder
- 1 tsp sugar
- 2 Tbsps warm water
- 1 cup plain Yogurt
- ½ Tbsp chopped Dill
- salt
- freshly ground Black pepper
- To serve
- Wholemeal Bread

Preparation steps
1.
Soak the leeks in the warm water for about 20 minutes, then drain well.
2.
Toss the apples in the lemon juice to prevent them browning. Set aside.
3.
Mix together the leeks, apples, walnuts and herring. Put into a serving bowl.
4.
For the dressing: whisk together all the ingredients and season to taste with salt and pepper.
5.
Drizzle over the salad ingredients and toss well to coat.
6.
Sprinkle with chopped walnuts. Serve with wholemeal bread.
