50 grams grated Parmesan
100 milliliters olive oil

Preparation steps

1.

Rinse the basil, pat dry, and remove the leaves from the stems. Peel the garlic and finely dice. 

2.

Crush the garlic and pine nuts in a mortar. Add the basil and crush also. 

3.

Mix in the cheese, and season to taste with salt and pepper. Gradually incorporate the oil into the basil mixture until a thick pesto has formed.

4.

Place in a jar, and cover with oil. The pesto will keep for a few weeks in the refrigerator.
