4 Fennel bulb
6 shallots
2 fresh Oranges
olive oil
salt
freshly ground peppers
3 sprigs thyme
800 grams Perch fillet
1 tsp honey
For garnishing

scallions (cut into thin strips)

Preparation steps

1.

Rinse and dry fennel, remove hard stalks and cut fennel into slices. Peel shallots and cut into wedges. Peel oranges thoroughly and cut out fillets, collecting all resulting juice. Squeeze all remaining pulp.

Heat 2-3 tablespoons of oil in a pan and saute fennel and shallots for 2-3 minutes. Season with salt and pepper and add orange juice. Add thyme and simmer, covered, for 6-8 minutes on low heat.

Rinse perch and cut into eight equal pieces. Season with salt and pepper. Heat lightly oiled grill pan and cook fish for 2-3 minutes per side or until golden brown. Set aside and let rest.

4.

Add orange segments to fennel and season with honey, salt and pepper. Transfer to plates or bowls and top with perch fillets.

5.

Garnish with thyme and scallions. Serve.
