- 1 Tbsp Oil
- 2 onions (finely chopped)
- 4 potatoes (peeled and diced)
- 1 ½ liters vegetable stock (or water)
- 8 ozs Watercress
- salt

- 4 Tbsps cream (35% fat)

Preparation steps
1.
Heat the butter and oil in a large pan and add the onion and potatoes. Cover and cook slowly over a low heat for 15-20 minutes until softened, stirring occasionally.

Add the stock or water, cover and bring to a boil. Simmer for 15-20 minutes until the vegetables are tender. Cool slightly.
3.
Transfer the vegetables in batches to a blender or food processor and blend until smooth. Return to the pan and season to taste with salt and pepper.
